  • 3/4 cup of mayonnaise
  • 1/4 cup of sour cream
  • Juice of 1 lime
  • 1/2 tablespoon of honey
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of chili powder

  • Chipotle peppers to taste pureed into a paste for spiciness

  • Mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl until smooth. Set aside.

**Cooking the Eggs, Bacon, and Buns:**

  • Cook bacon in a hot pan over medium heat until golden and crispy, flipping halfway through. Sprinkle with brown sugar if desired. Remove from the pan once fully cooked.
  • Toast buns with butter or mayo on a pan or in a toaster.

  • On each bun, layer chipotle sauce, eggs, cheese, and avocado. Enjoy warm!

You can also use Hawaiian rolls to turn these into sliders!
