4brioche bunsor English muffins, sourdough, toast, etc., toasted
6slicesof beef bacon
1 to 2teaspoonsof brown sugar
5 to 6large eggs
1tablespoonof unsalted butter
Salt and black pepperto taste
4slicesof American cheese
1 to 2avocadossliced
**Chipotle Sauce:**
3/4cupof mayonnaise
1/4cupof sour cream
Juice of 1 lime
1/2tablespoonof honey
1/2teaspoonof black pepper
1/2teaspoonof chili powder
2 to 3tablespoonsof adobo paste
Chipotle peppers to tastepureed into a paste for spiciness
Instructions
**Making the Chipotle Sauce:**
Mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl until smooth. Set aside.
**Cooking the Eggs, Bacon, and Buns:**
Heat butter or oil in a pan over medium heat. Crack eggs in and cook them low and slow, scrambling and fluffing them until super fluffy. Add salt and black pepper to taste. Once cooked, remove from the pan.
Cook bacon in a hot pan over medium heat until golden and crispy, flipping halfway through. Sprinkle with brown sugar if desired. Remove from the pan once fully cooked.
Toast buns with butter or mayo on a pan or in a toaster.
**Assembly:**
On each bun, layer chipotle sauce, eggs, cheese, and avocado. Enjoy warm!

You can also use Hawaiian rolls to turn these into sliders!
