Rotel Dip

With just three main ingredients, you can whip up this irresistible Rotel cheese dip! This dip is a breeze to make for any party and saves you from dealing with a mountain of dirty dishes since it all cooks in one pot. It’s the ideal dip to prepare and keep warm in a slow cooker for those long events (hello, Super Bowl Sunday!).

  • 1 pound 85% lean ground beef or pork sausage
  • 1 can 10 ounces Rotel tomatoes
  • 1 package 16 ounces Velveeta cheese, cubed
  • 1/2 teaspoon chili powder optional
  • Chopped fresh cilantro and tortilla chips for serving


  • In a medium pot or saucepan over medium-high heat, cook the beef, stirring often, until it’s browned, about 5 minutes. Drain off the fat, leaving the meat in the pot.
  • Reduce the heat to medium and add the tomatoes and cheese. Cook, stirring frequently, until the cheese is melted and everything is well combined, about 5 minutes.
  • Remove the pot from the heat and stir in the chili powder if you’re using it.
  • Serve the dip warm in the skillet or transfer it to a serving bowl. Sprinkle some cilantro on top if you like and serve with tortilla chips on the side. Enjoy the cheesy goodness!
