These Lucky Charm Rice Krispies are a breeze to make and so much fun! Whether you’re a kid or a grown-up, you’re bound to enjoy them, and guess what? They’re ready in just 15 minutes.

March is here, and that means it’s time to celebrate all things lucky! You know, I’m a big fan of baking, but sometimes, you just need something quick and easy. My usual Rice Krispie Treat recipe is already a step up from the classic, with brown butter and vanilla. Now, with the addition of Lucky Charms, these treats are sure to please everyone!

TIPS FOR THE RECIPE:
One common mistake with this recipe is to press down too hard when putting it in the pan. You want to gently spread it out and lightly pat it down with a spatula or your hands.

Worried about the mixture sticking to your hands? Here’s a trick: before you handle the Rice Krispies, wet your hands with a few drops of water and rub them together. The water will stop the marshmallow mixture from sticking, making it easier to shape the treats without squashing them!

This recipe calls for both Rice Krispies and Lucky Charms. I’ve seen versions using only Lucky Charms, which you can try if you prefer, but I thought it might be too sweet with just the marshmallows and white chocolate. Mixing them 50/50 gives a nice balance, but hey, if you want to go all-in on Lucky Charms, go for it!

You’ll need a 9×13 pan for this recipe. I like using one with a lid for easy transportation to parties or potlucks!

Lucky Charm Rice Krispie Treats

Ingredients
  

For the Rice Krispie Treats:

  • – 1 cup salted butter
  • – 20 ounces mini marshmallows
  • – 2 teaspoons vanilla extract
  • – ½ teaspoon salt
  • – 5 cups Rice Krispies
  • – 5 cups Lucky Charms

For the garnish:

  • – 1 cup white chocolate chips or baking bar
  • – ½ cup Lucky Charms marshmallows

Instructions
 

For the Rice Krispies:

  • Line a 9×13 pan with parchment paper and lightly spray with nonstick cooking spray. Set aside.
  • In a large pot, melt the butter over medium heat. Keep stirring until the butter starts to brown slightly. It should foam up twice and then give off a nutty aroma. Remove from heat immediately to avoid burning.
  • Stir in the vanilla extract (watch out for the sizzle!), then add the salt.
  • Add half of the marshmallows and stir until almost melted, then add the rest. Keep stirring until all marshmallows are melted.
  • Add the Rice Krispies and gently stir until combined. Do the same with the Lucky Charms.
  • Pour the mixture into the prepared pan. With wet hands, gently press it into the pan without crushing it.

For the garnish:

  • Break up the white chocolate and melt it in a heatproof bowl in the microwave, stirring every 30 seconds until smooth.
  • Let the melted chocolate cool for 3 minutes, then drizzle it over the treats using a spoon.
  • Sprinkle on the extra Lucky Charms marshmallows and enjoy!
