Key Lime Mojitos

Got some Key limes left over from baking your favorite pie? How about mixing up a tangy and refreshing summer cocktail? The zesty punch of Key lime juice gives this mojito a citrusy kick, while a touch of cream transforms it into a creamy delight reminiscent of Key lime pie. Don’t worry if you don’t have simple syrup on hand; it’s a breeze to whip up at home, and you can even toss in some fresh mint leaves for extra flavor.

Ingredients
  

  • 1/4 cup crushed graham crackers
  • 3 tablespoons simple syrup plus extra for the glass
  • 1/4 cup fresh mint leaves plus more for garnish
  • 3 tablespoons fresh Key lime juice
  • 4 ounces white rum
  • 1 tablespoon heavy cream
  • Key lime rounds for garnish

Instructions
 

  • Spread the crushed graham crackers on a plate. Pour some simple syrup onto another plate. Dip the rims of your glasses into the syrup, then into the crackers to coat them.
  • In a cocktail shaker, muddle the mint leaves with the lime juice. Fill the shaker with ice and add the rum, cream, and additional simple syrup. Shake vigorously until the outside of the shaker gets frosty, about 20 seconds.
  • Fill your glasses with ice and strain the mojito mixture into them. Garnish with extra mint leaves and a slice of Key lime.
  • Sip on this delightful concoction and let the flavors whisk you away to a tropical paradise!
