Ingredients
  

  • Cooking spray or a bit of oil for greasing the baking dish
  • 1 tortilla 8-10 inches in diameter
  • 3 large eggs
  • 1/3 cup cottage cheese
  • Salt and black pepper to taste

  • Chopped spinach or arugula
  • 1/4 cup Mozzarella cheese or your favorite cheese

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). While it’s heating up, gather your ingredients and prep your toppings.
  • Take a round baking dish or a pie dish about the same size as the tortilla. Lightly grease the bottom and sides with cooking spray or a small amount of oil.
  • Place the tortilla at the bottom of the dish to create the crust.
  • In a mixing bowl, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.
  • Pour the egg and cottage cheese mixture over the tortilla in the baking dish, ensuring an even spread.
  • Add your favorite toppings. Get creative! Sprinkle diced tomatoes, green peppers, and chopped spinach or arugula evenly over the egg mixture. Alternatively, use option two with tomatoes, olives, red onions, and spinach. Feel free to add extras like diced onions, mushrooms, or cooked bacon if you like.
  • Finally, sprinkle your choice of cheese over the toppings to give the tortilla bake a delicious cheesy finish.
  • Place the baking dish in the preheated oven and bake for 20-25 minutes or until the eggs are set and the top is golden brown. Keep an eye on it to avoid overcooking as cooking times may vary.
