Cheesy Bacon Butternut Squash

Ingredients
  

  • 2 pounds butternut squash peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 tablespoons chopped thyme
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 pound bacon chopped
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup freshly grated Parmesan
  • Chopped fresh parsley for garnish

Instructions
 

  • Preheat your oven to 425°F. In a large ovenproof skillet or baking dish, toss the butternut squash with olive oil, garlic, and thyme. Season with salt and pepper, then scatter the chopped bacon on top.
  • Bake in the oven until the squash is tender and the bacon is cooked through, which usually takes about 20 to 25 minutes.
  • Once the squash is cooked, remove the skillet from the oven and sprinkle the mozzarella and Parmesan on top. Pop it back into the oven for another 5 to 10 minutes, or until the cheese is nice and melty.
  • Garnish with fresh parsley and serve the skillet warm. Get ready for some serious flavor!
