Instructions
Preheat your oven to 425°F. In a large ovenproof skillet or baking dish, toss the butternut squash with olive oil, garlic, and thyme. Season with salt and pepper, then scatter the chopped bacon on top.
Bake in the oven until the squash is tender and the bacon is cooked through, which usually takes about 20 to 25 minutes.
Once the squash is cooked, remove the skillet from the oven and sprinkle the mozzarella and Parmesan on top. Pop it back into the oven for another 5 to 10 minutes, or until the cheese is nice and melty.
