Heat olive oil and butter in a pan over high heat. Add the steak and season with paprika, chili powder, onion powder, garlic powder, salt, black pepper, brown sugar, and Worcestershire sauce. Mix well.
Cook for 6 to 7 minutes until fully cooked and seared. Set aside.
**Make the Gravy:**
In a saucepan over medium heat, melt the butter and add flour to create a roux. Cook for 3 to 4 minutes.
Add beef broth, mustard, garlic powder, onion powder, paprika, black pepper, and beef bouillon base. Mix until thickened into a gravy. Remove from heat.
Increase heat to medium and add water, one tablespoon at a time, stirring until evaporated. Repeat until onions are dark golden brown and translucent. Set aside.

Prepare french fries according to package directions.
In a bowl or plate, layer fries, cheese curds, gravy, onions, and beef.
