Imagine biting into a buttery, chewy bar filled with sweet strawberry jam – it’s like having the best of both worlds with Pop-Tarts and classic blondies all in one delicious treat! These adorable bar cookies are perfect for breakfast, brunch, or as a fun party dessert, and the best part? They’re super easy to make!

Here’s how to make the best Pop-Tart blondies:

  • Layer it right: Spread half of the blondie batter in the pan, add the jam, then top it with the rest of the batter. If spreading the batter over the jam is tricky, try dolloping spoonfuls of batter on top and gently bringing them together.
  • Choose your jam: While we went for classic strawberry jam, feel free to use any jam or jelly you have on hand.
  • Chill out: Let the blondies cool completely before frosting them to ensure the glaze looks perfect.
  • Use the right tools: A serrated knife will give you cleaner cuts, but a chef’s knife works fine too.

Strawberry Pop-Tart Blondies

Ingredients
  

  • Cooking spray
  • 1 1/4 cups packed light brown sugar
  • 3/4 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 cup strawberry jam
  • 1 cup powdered sugar
  • 1 to 2 tablespoons whole milk
  • Sprinkles for decorating

Instructions
 

  • Preheat your oven to 350°F. Grease an 8″x8″ baking pan and line it with parchment paper.
  • In a large bowl, whisk together brown sugar, melted butter, and granulated sugar. Add eggs, vanilla, and salt, and whisk until well combined. Stir in flour until just mixed.
  • Spread 1 1/2 cups of batter in the prepared pan. Add dollops of jam on top and gently spread it over the batter.
  • Dollop the remaining batter over the jam layer and gently smooth it with an offset spatula.
  • Bake the blondies for 45 to 50 minutes until golden around the edges. Let them cool completely.
  • In a medium bowl, whisk powdered sugar and milk until smooth. Pour the glaze over the cooled blondies and spread it evenly. Top with sprinkles and let the glaze set for about an hour.
  • Cut into bars and enjoy your delightful Pop-Tart blondies!
