Chipotle Carne Asada

Ingredients
  

  • 1 pound flank or skirt steak
  • 1/4 cup olive oil
  • Juice of 1 orange
  • Juice of 1 lime
  • 2 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt adjust to taste
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne powder add more for extra kick
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 4 tablespoons unsalted butter

Instructions
 

  • In a big bowl, combine olive oil, orange juice, lime juice, soy sauce, white vinegar, smoked paprika, cumin, oregano, salt, garlic powder, onion powder, cayenne, black pepper, and cilantro.
  • Whisk everything together to create a marinade. Taste and adjust any flavors to your liking.
  • If using flank steak, slice it in half with the grain to create 2 thin steaks instead of 1 thick one.
  • Place the steaks into the marinade. Cover and let them sit for at least 2 hours or overnight.
  • Preheat your skillet or grill over high heat.
  • Remove the steak from the marinade and let the excess drip off. Place it on a cast iron skillet. Sear until one side is browned, about 4 minutes. Flip it over, add butter to the skillet, and sear the other side until browned for about 4 minutes.
  • If you prefer your steak less rare and more done, bake it at 400°F until it reaches your desired temperature. Alternatively, lower the heat on the stove and cook it for 1 to 2 more minutes on each side for more doneness.
  • Let the steak rest for 8 minutes.
  • Slice against the grain into thin strips. Optionally, cube it into smaller pieces for tacos and burritos.
  • Garnish with cilantro, a squeeze of lime, and salt and pepper as needed!
