Instructions

  1. Make the ricotta smooth
    Add the ricotta to a medium bowl and beat it with a fork, whisk, or hand mixer until it becomes smooth and light. If you want a silkier texture, mix it briefly with a hand mixer on low speed.
  2. Blend in the flavorings
    Stir in the honey, vanilla, lemon zest if using, and a small pinch of sea salt. Mix until everything is evenly combined and the ricotta tastes lightly sweet and creamy.
  3. Chill the mixture
    Cover the bowl and place it in the refrigerator for 20 to 30 minutes. Chilling helps the mixture firm up so it is easier to shape.
  4. Form the bites
    Use a small scoop or spoon to portion the chilled ricotta into small mounds or oval-shaped quenelles. Place them carefully on a serving plate.
  5. Add the pistachios
    Scatter the chopped pistachios over each portion and press them in gently so they adhere.
  6. Finish with honey
