  • 1 lb (450 g) chicken breast or thighs, cut into bite-size pieces
  • 1 tablespoon oil
  • Salt and pepper, to taste
  • 2 cups cooked rice, white, jasmine, or brown
  • 1 cup pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon cornstarch
  • 2 garlic cloves, finely minced
  • 1 teaspoon grated ginger, optional
  • Green onions or sesame seeds, for garnish


Instructions

  1. Brown the chicken.
    Set a large skillet over medium-high heat and pour in the oil. When the oil shimmers, add the chicken pieces in an even layer. Season with salt and pepper. Let the chicken cook without moving it too much at first so it can develop color. Stir occasionally and continue cooking until the pieces turn golden on the outside and no longer look pink in the center. If needed, cook in batches so the pan does not get crowded. Once the chicken is fully cooked, transfer it to a plate and set it aside.
  2. Mix the sauce.
    In a medium bowl, combine the pineapple juice, soy sauce, honey or brown sugar, cornstarch, minced garlic, and grated ginger if you are using it. Whisk well until the cornstarch dissolves and the mixture looks smooth. This helps the sauce thicken evenly later instead of clumping in the pan.
  3. Warm the pineapple in the skillet.
    Add the pineapple chunks to the same skillet you used for the chicken. Let them sit in the warm pan for a moment so they pick up a little color and soak in any leftover flavor from the chicken. Stir gently so the pieces do not break apart.
  4. Add the sauce and simmer.
    Pour the prepared sauce into the skillet over the pineapple. Stir everything together and bring the mixture to a gentle simmer. Keep stirring as the sauce heats so it thickens evenly. After a few minutes, it should become glossy and slightly thick enough to coat the back of a spoon.
  5. Return the chicken to the pan.
    Add the cooked chicken back into the skillet. Toss it thoroughly so every piece gets covered in the sauce. Let the chicken simmer in the glaze for another minute or two so the flavors blend together and the sauce clings nicely to the meat.
  6. Serve with rice.
    Spoon warm rice into bowls or plates, then top it with the pineapple chicken mixture. Make sure each serving gets plenty of sauce, pineapple, and chicken. Finish with sliced green onions or a sprinkle of sesame seeds for a fresh, polished look.
