Instructions
- Place the butter in a saucepan over medium heat and cook, stirring often, until it melts, foams, and turns a golden brown with a nutty smell. Remove from the heat and let it cool slightly.
- In a large bowl, combine the browned butter, brown sugar, and granulated sugar. Stir until the mixture looks smooth and well blended.
- Add the eggs and whisk until the batter looks shiny and evenly mixed.
- In a separate bowl, stir together the flour, baking soda, cinnamon, and salt.
- Add the dry mixture to the wet ingredients a little at a time, mixing just until the dough comes together.
- Cover the dough and chill it in the refrigerator for at least 30 minutes.
- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for about 12 minutes, or until the edges are lightly browned and the centers still look soft.
- Let the cookies rest on the baking sheet for a few minutes before moving them to a cooling rack.
