TIPS FOR ASSEMBLY:<\/strong><\/p>\n\n\n\n

  • Wrap Individually:<\/strong> After assembling, wrap each ice cream sandwich tightly with plastic wrap to help keep them together.<\/li>\n\n\n\n
  • Freeze Time:<\/strong> Make these ahead of time! Let the cookies cool completely, then scoop the vanilla ice cream in the center and wrap as described above. Freeze for at least 3 hours. They\u2019ll stay fresh for 2-3 months if wrapped tightly!<\/li>\n\n\n\n
  • Perfectly Round Cookies:<\/strong> Use a round cookie cutter to shape the cookies while they\u2019re still warm. Place the cutter over the cookie and gently move it around to create a perfect circle.<\/li>\n<\/ul>\n\n\n\n

After chilling, use a large cookie scoop (about 2 1\/2-3 tablespoons of dough per cookie) to scoop dough onto the cookie sheet, spacing about 2 inches apart.<\/li>\n<li id=\"instruction-step-4\">Bake for 10-12 minutes, or until the edges are just set.<\/li>\n<li id=\"instruction-step-5\">When the cookies come out of the oven, use a round cookie cutter or glass to gently reshape them. Gently spread to the edges and place another cookie on top, pressing gently. Repeat until all sandwiches are made.
